Umbria is different. Darker. Earthier. The obsession here is the Black Truffle of Norcia—still hunted by locals and their Lagotto dogs. Pair that with the brooding weight of a Sagrantino. We aren't serving a generic menu here; we are serving the actual geology of the region.
